I'd think nearly all teams are formed at this point. Pick the club closest to your home and contact the director. Take any team he offers, stay current and get touches.
After a few weeks of practices, if you think he's obviously playing too low, ask about opportunities to practice with a higher team. Later, ask about opportunities to move up after the Fall season. If you're not content, look for mid-season tryouts.
You don't mention Concorde Fire North.

I would agree with forsythsd that most teams are formed. I would highly recommend calling the director of the club closest to you and explaining the situation. Yes, try to get on the highest team offered and possibly get promoted over the winter or request a release and sign with another club if the level of play isn't sufficient. There's also AFU which isn't too far from S. Forsyth along with Concorde North.

My family has experience w/ UFA Forsyth & Concorde North. I'd definitely go to UFA & see if they'll place you on any team. If they see your kid is in the wrong group they won't hesitate to find him a spot on appropriate team. Often times they will let you train with different teams to see where you fit before joining a team. I've seen them do this with new residents in the past. UFA is highly organized & run like a professional organization. UFA is not perfect but they do care about development and have great coaches, amenities, etc. As for CF North, they have fine coaches too but in our experience they aren't nearly as organized as UFA and don't offer as much overall.
Take it FWIW...Just the personal opinion & experience of one family.....

Coach Broome is an excellent coach and good guy! His number should be listed on the UFA Milton website - give him a call. I'd also call Iggy at UFA Forsyth - both these men are very responsive and will speak to parents. (And no, we aren't at UFA, just been around forever and know quite a few coaches)
While most teams are set, any decent coach leaves a spot or two for anyone moving in. On the girls side, most of the UFA teams only carry 16-17 so there's room.
For South Forsyth - UFA is probably the closest option. Alpharetta Ambush and Roswell Soccer Clubs both have residency restrictions and most of the rosters have to live in the city.

Ga Rush has a great Academy program. It's run as a "pool" of players so rosters vary week to week and there are no set teams. A great place to start new and work your way up. Three of my kids went through the academy there and developed very well
Good option to consider at your players age

2nd Coach Broome, good coach.
I would try to get your kid in front of a few coaches or directors, not to say anything negative about the 7/8th teams, but if your kid a good player, I'd fear he could get lost over at UFA being that far down on the depth chart, they have lots of teams in each age group. I'd put a call into the DOCs like they suggested, if the kid can play there is always room on teams.

I wouldn't rule out Roswell Santos or Alpharetta Ambush. Someone mentioned their residency rules, but those rules don't really come into play. Think the rules are that 50% of players in each age group have to be city residents. Across 30 or 40 kids in Academy age groups this is not an issue. I think both clubs pool their Academy teams as well, so players who do well can move up to the next level team immediately. Not sure what ages David Eristavi at Ambush coaches, but he is a great coach for younger kids - one of best I know at pushing kids to be better technically.
