Or changed week of due to the fields being used by by another entity with priority? Getting tired of losing what little practice time we have and am curious about who does better.

Not often for weather... never for another entity having priority over the fields we use to train on. That seems like an oversight or mismanagement by club officials. In fact, I've often seen our coaches kick other groups off of our fields well in advance of practice starting (in a polite way, maybe "coaches ask them to please vacate during practice times" may have been more accurate)
Are you at a bigger club in the metro atlanta area?

Our fields aren’t “our” fields. We lose out a lot for weather and increasingly for the owners of the fields. We are with a big organization and very much in metro. We are a young age group but concerns are growing about our future.

Canceled due to scheduling conflict? Yeah that’s rare and only if say our club has a team that needs to play a weeknight game. I’ve heard a couple times about this from the Franklin Gateway Complex in Marietta as those fields are all shared and no soccer club has exclusive rights to them.
Sounds like you’re a small club that has to share a complex with a club that has first rights to the field.
What complex is it you’re team is sharing?

It can be challenging (as we at SSA rent from facilities/schools that have to deal with changes to their own schedules due to weather/Covid/field conditions etc), but I think we are fortunately blessed with more than enough alternatives when we are subjected to late (or no advance) notice about changes to scheduled events at our facilities. It's never going to be perfect, but fortunately we have access to enough alternative options when we're told with no advance warning that something's changed on the facility calendars.

It's definitely difficult to see happen, but it's common to see practices canceled because of weather, but I'm not sure I've seen them reschedule on a regular basis because of other priorities.
Some clubs have secured turf fields to ensure fewer weather cancelations (leading some parents to choose clubs based on this). Some try to book time at places like TOCA (more cost to the parents, but they get touches), though I'm not sure if TOCA's current management is still allowing that.
Have you asked the club/coach about makeup times?
