In the past we have done team gift with certain coaches and additional personal gift with ones we really like.
Some coaches are so great I want to send a personal holiday gift...others, not so much. Even in the case of the coaches we have not liked very much if the team is doing a gift I will always donate my portion. Like them or not they do not get paid much and everyone deserves a holiday gift (this is excepting anyone who is/was abusive or rude...Thankfully no one has crossed this threshold for us).

How often do you gift school officials for doing their job probably more effective and longer than a seasonal paid club coach?
Do u gift the postal worker, school bus driver, local officer working traffic at the schools?
How about any other service provider u may use throughout the year, you gift them too for simply doing their job?
Unless paid coaches have proven their value beyond the club fees, travel fees, etc, like winning a National championship or single handily helping Susie or Johnny receive a college scholarship or selected into the pro ranks.. no gift 🎁 is warranted unless they are unpaid (volunteer) coaches.
Sorry, not a fan of gifting paid coaches not exceeding expectations.. I have seen the rare coach actually gift the team/ players for their hard work and commitment through the year(s)..then, it’s a Yes as the coach made it about the players and not simply collecting a pay check

The only time we did it was when my son's team won a division and we knew the coach was not coming back the following year. Maybe it was done another time and the wife pitched in and I didn't know, but that is the only one I can remember.

Regular mail carrier or trash guys? not unusual at all for people to give them gifts. People who work more directly - housekeepers, babysitters, etc? definitely

Because they interacted with and took care of our kids on a daily basis. Our kids had developed a personal relationship with them and we valued that. It was a way to say thanks. But the postal worker? No, we usually don't because we rarely see them. We don't give gifts to service providers for simply doing their job. We do it if they either go above and beyond what's asked of them OR they have a personal relationship with us and/or our kids such that we want to show them that we value them. My daughters have had coaches who we really wanted to give gifts to (and we have, either on our own or via the team) and we've had some who didn't really do anything more than what was asked of them, so we didn't give them a gift.

Our postal worker adds a dog bone to our mail if she has to leave a package. Our dog sees her through the glass door and always lets us know the bone is there. Postal worker like that deserves a gift IMO.
