Does anyone know when most clubs fee due dates is ?
And is that when coaches know if they are going to need extra players?

For UFA you have 3 days from when you get your email. For us we got a call from the coach on Friday with an offer but the email didn't come till Monday. You had 3 days from that email on Monday to register and make a payment. I hope this helps some.

Each club is sightly different, but it is usually 3-7 days from when you officially receive an offer (via email). I think AFU gives you a few days, and if you register after that there is a late fee...at least they used to do that.
If you communicate with the coach that you need more time, maybe because you are on vacation, they might give you some time. If you don't communicate with the coach, don't be surprised if your spot is given to someone else.
